Fruit & Vegetable Cold Storage, Engineered per Commodity
The single most common mistake in Indian horticulture cold storage is treating every commodity the same. A potato needs 2–4°C at 95% RH. An apple needs 0–1°C with CA. A banana needs 13°C (never below) and must be ripened in controlled ethylene. Leafy greens need 0°C and are destroyed by 1°C of drift.
HyperCold designs commodity-specific rooms, not generic cold boxes.
Commodity Temperature & Humidity Reference Table
| Commodity | Optimal Temp | RH | Max Storage | Notes |
|---|---|---|---|---|
| Apple | 0–1°C | 90–95% | 4 mo / 9 mo CA | CA recommended |
| Banana (ripening) | 13–15°C | 90–95% | 4–7 days | Ethylene chamber |
| Banana (green) | 13°C | 85% | 2–4 wk | Never below 13°C |
| Grape | −0.5–0°C | 90–95% | 2–6 mo | SO₂ fumigation |
| Mango | 13°C | 85–90% | 2–3 wk | Chill-sensitive |
| Pomegranate | 5°C | 90–95% | 2 mo / 6 mo CA | — |
| Potato (table) | 2–4°C | 90–95% | 6–9 mo | Sprout inhibitor |
| Potato (seed) | 2–3°C | 90–95% | 8–10 mo | — |
| Onion | 0°C or 25–30°C | 65–70% | 6–8 mo | Low humidity! |
| Tomato (green) | 13°C | 90% | 1–3 wk | Chill-sensitive |
| Leafy greens | 0°C | 95–100% | 7–14 d | — |
| Carrot | 0°C | 95–100% | 4–6 mo | — |

Subsidy Landscape for Fruit & Veg Storage
NHB 35%, MIDH integrated, PMKSY viability gap, state horticulture missions. FPOs and farmer cooperatives get additional grants. HyperCold's DPR success rate is over 85% on first submission.
Check Your Subsidy EligibilityFrequently Asked Questions
What temperature is best for storing apples?
0–1°C at 90–95% RH. For extended storage of 8–9 months, Controlled Atmosphere (CA) is recommended.
Can bananas be stored in a cold room?
Yes, but never below 13°C — bananas are chill-sensitive. Ripening requires controlled ethylene exposure at 13–15°C.
What's the difference between pre-cooling and cold storage?
Pre-cooling rapidly removes field heat within hours of harvest. Cold storage maintains product at target temperature for days to months.
How much does a 100 MT fruit cold storage cost?
Approximately ₹30–50 lakh depending on commodity, temperature requirements, and PUF panel thickness.
Is subsidy available for fruit cold storage?
Yes — NHB covers 35% back-ended subsidy for horticulture cold storage. MIDH and state missions provide additional support for FPOs.
What PUF panel thickness for fruit storage?
100 mm for 0–5°C storage, 150 mm for sub-zero blast freezing or hot climate zones.
Do you build banana ripening chambers?
Yes — 6-room battery systems with ethylene injection, temperature staging, and forced-air circulation.
