Engineering Details
Carcass chilling protocol
Hot carcass enters chiller at 37–40°C. Stage 1: pre-chill 4–8°C with high air velocity (3 m/s) for 4 hours — removes surface heat fast to inhibit microbial growth. Stage 2: equalisation 0–2°C, low velocity (0.3 m/s) for 16–20 hours — core reaches +4°C. Total cycle 24 hours per carcass. Sizing per carcass: 25–30 kg buffalo / 1.5–2 kg/m² floor area.
Why air velocity matters
Carcass surface dries during chilling — controlled drying improves shelf life and reduces weight loss to 1.5–2.5% (uncontrolled is 4–6%). HyperCold uses two-stage variable-speed evaporators to deliver Stage 1 high velocity then Stage 2 low velocity automatically.
Halal & layout
Halal slaughter and chilling areas must remain physically separate from any non-halal processing. Single-direction product flow from kill floor → chill → cut → pack → ship, no cross-traffic. Separate operator entry, sanitation point at every room transition. Floor slope 1–2% to drainage with stainless mesh covers.
Frozen storage and dispatch
Frozen meat at -25°C in palletised PUF cold store. Loading dock insulated airlock with rapid-roll door (open <90 seconds per truck cycle). Reefer truck pre-cooled to -22°C minimum before loading. Loading temperature continuously logged for export documentation.

What is the APEDA layout requirement?
APEDA registration requires HACCP-certified single-direction flow, separate clean/dirty zones, dedicated CIP, and validated chilling protocol with temperature mapping.
Can a buffalo meat plant freeze poultry too?
Not under EU certification — species segregation required. Domestic-market plants can be dual-purpose with strict cleaning protocols.
