Air temperature vs product core temperature
Air temperature inside a blast freezer is much lower than the target product core temperature; freezing is complete when product core reaches the target, not when air does.
Batch size, thickness, inlet & target temperature
- Batch size: kg per cycle.
- Product thickness: thicker products freeze slower.
- Inlet temperature: warmer product needs longer cycles.
- Target core temperature: typically deep frozen.
Trolley / rack loading
Air must reach all surfaces. Trolley and rack design is part of the blast freezer design.
