Cold Storage Temperature Guide by Product
A field-grade reference table of optimum storage temperature, humidity, and shelf life for every major commodity stored in Indian cold chains.
How storage temperature is determined
Three factors set storage temperature: (1) lowest safe temperature (LST) — the point below which chilling injury or freeze damage occurs, (2) respiration rate at storage temperature, and (3) ethylene sensitivity / production. The optimum is the lowest temperature above LST that minimises respiration. Misalign this by 2°C and shelf life can halve.
Fruits (chilling sensitive vs tolerant)
Apples 0 to -1°C, 90–95% RH, 4–6 months (CA: 9–12 months). Mango 12–13°C, 85–90% RH, 14–21 days (chilling injury below 10°C). Banana (ripe) 13–14°C, 90% RH, 5–7 days. Grapes -0.5 to 0°C, 90–95% RH, 8–12 weeks with SO₂. Pomegranate 5°C, 90–95% RH, 8–10 weeks. Citrus 4–9°C (variety dependent), 85–90% RH, 6–12 weeks. Strawberry 0°C, 90–95% RH, 5–7 days.
Vegetables
Potato (seed) 2–4°C, 90% RH, 6–8 months. Potato (table) 7–10°C with CIPC sprout-suppressant, 90% RH, 6–10 months. Onion 0–2°C OR 25–30°C dry, 65–70% RH, 6–8 months. Tomato (mature green) 12–13°C, 90–95% RH, 14–21 days. Leafy greens 0–2°C, 95–98% RH, 7–14 days. Cauliflower / cabbage 0°C, 95% RH, 3–6 weeks. Capsicum 7–10°C, 90–95% RH, 2–3 weeks.
Mushrooms
Button mushroom (fresh) 0–2°C, 95% RH, 5–7 days. Pre-cooling within 4 hours of harvest is critical — every hour delay costs ~1 day of shelf life. For cultivation rooms: spawn run 22–25°C, pinning 16–18°C, cropping 14–16°C with CO₂ <1000 ppm.
Dairy & beverages
Pasteurised milk 2–4°C, 7 days. Cheese (hard) 2–8°C, 90% RH, 3–12 months. Cheese (soft) 0–4°C, 95% RH, 2–6 weeks. Butter -18 to -23°C (long-term) or 0–4°C (short-term). Ice cream -25 to -30°C for storage, -18°C for display. Yogurt 2–4°C, 21–28 days.
Meat & seafood
Fresh red meat -1 to +2°C, 85% RH, 1–3 weeks. Poultry (fresh) -1 to +2°C, 95% RH, 7–10 days. Frozen meat -18 to -25°C, 12–18 months. Blast freeze meat to -18°C core within 24 hours. Fresh fish 0 to +2°C with ice, 5–7 days. Frozen fish -25 to -30°C, 6–12 months. Shrimp (IQF) -30°C blast then -25°C storage.
Pharmaceuticals (WHO PQS / GDP)
Refrigerated drugs (2–8°C) — vaccines, insulin, biologics. Controlled room temperature 15–25°C. Frozen vaccines -20°C ± 5°C (OPV, varicella). Ultra-cold -70°C ± 10°C (mRNA vaccines). All pharma cold storage requires continuous 24×7 temperature mapping at minimum 9 points, calibrated sensors with NABL certificate, and a documented excursion protocol.
Flowers
Roses 0–2°C, 95% RH, 1–2 weeks. Carnation 0°C, 95% RH, 3–4 weeks. Chrysanthemum 0–2°C, 90–95% RH, 3–4 weeks. Orchids 7–10°C (chilling sensitive). Pre-cooling to remove field heat is critical — wet-pack pre-cooling drops temperature 10× faster than dry storage.
Frequently Asked Questions
Can I store multiple commodities in one chamber?
Only if temperature, humidity, and ethylene compatibility match. Apples (ethylene producer) and leafy greens (ethylene sensitive) in the same chamber will destroy the greens in days.
What is the safest universal cold storage temperature?
There is none — 0 to +2°C is the most common compromise but will damage chilling-sensitive crops like mango, banana, and capsicum.
